Victorinox is well-known for its Swiss Army knife; so, I made no qualms when this was recommended Cook's Illustrated (or America's Test Kitchen). I've had Victorinox's utility knife and peeler even before but am very glad I found it's chef's knife. (Want cheaper but equally efficient knives - from Santoku style, to utility, to bread knife, to cleaver? Try the IKEA 365+ Series of knives.)

Let's start by saying I'm tight with a buck and have owned what I thought were decent knives before. Nothing I own compares to the sharpness of this knife and the ease with which I can prep vegetables, my primary use of this product.
I've since learned that my daughter (a sous chef) in a nice restaurant uses this knife as well. For my money it was worth every cent. Thanks Forschner for a fine product.

Why did I wait so long to buy this knife? It makes food preparation a joy, and sharpens beautifully. Do yourself a favor and order this immediately - you will not regret it.

I too saw this on America's Test Kitchen. I make beef jerky regularly. This is the best knife I have used. My sister, great grandmother of 8, wants one for her birthday.
